Prajapati is Brahma, in this particular case. The Vedic scriptures tend to use titles that indicate a certain feature of the person they are describing. Brahma is known as Prajapati because he is the father of the demigods. He is also responsible for creating the bodies of the living things in this universe. -Praja- means lineage, progeny, and sons. -Pati- can sometimes be interpreted to mean -lord of-. The translation you're reading from doesn't make much sense. Sometimes, scholars of an ancient language will make mistakes because they don't understand the connotation of certain words, or due to a lack of familiarity with references to culture. That's why I'm wary of many Western translations, though not all of them are so confusing.

They way I know the Chinese creation myth is PanGu was literally a giant human, split apart the Earth and Sky, and when he died, his blood become rivers, his body became mountains, and his eyes became the Sun and Moon.
