And the overall consensus or understanding of your presentation seems to be to discourage anybody from creating their own soldering station after viewing all the steps that you have to go through obviously, with all the knowledge that is required about electronics, programming, as well as having the soldering equipment to build one.
Your video pretty much encourages people to do the exact opposite, and just realized that it's much simpler and more efficient to go out and buy one yourself.

Your code only looks at the tempurature when the heating element is off. So every time it turns on the heating element, it's blind to what the real termpurature is. I'd suggest adding coding that limited the power draw based on the distance in time between the heat element being turned on and the heat off signal to be sent out.

I replicate the circuit and the reason why it shows incorrect readings is because there is a moment in time when the reading is less than zero so the max6675 cannot read negative values and shows nan or zero according to the the type of data variable.
