Ctrl + F is the shortcut to the find option. I think it's better to find the values you want to replace first, to get an idea of where they're at, and do a quick check before proceeding to replace it.

The newest version of Excel does NOT have the find and replace option in the ribbon. Second, you can no longer replace styles, only words. As far as I can see.
