Your fun fact of the day. The Michelin star system was in fact invented by the tire company. Yes, that tire company. They invented it as a way to try and popularize the car, so that more people would buy a car, More people would use cars to travel, and therefore, more people would buy tires.
All of which is to say, don't take it too seriously. In many cases, it's just an advertising thing, and you can get some great food in large portions, yay leftovers, at your local greasy spoon for a whole lot less money.

I ate alone in your steakhouse in Manhattan in '19 (was brought in by -steakhouse- not your name, found out who you were later,
just wanted a NY Strip for the NY experience, felt out of place to start with but was made to feel welcome and had an amazing experience. It was also the most expensive steak I've ever bought but was more than happy with the price because the food was amazing, service top notch and entire experience was worth every penny

Regarding the white outfits, it's also a matter of cleaning. You can see the stains better, but you can also use very aggressive products to remove them. The coloring of clothes is actually fragile when it comes to cleaning grease stains, so in order to clean it regularly and keep it looking as good as new everyday, you need it to be white. This is also the reason why most hotels have white bedsheets.

The white jacket might actually be just to help with reflecting heat in such hot kitchens. Similar to tall toques, they're supposed to ensure an insulated column of air above your head.
Well, with induction stoves and many other improvements to the hot parts of kitchens, it's probably not as necessary as it used to be.

I would fail to get the chef job based on your omelet preferences, because I think your kind of omelette tastes terrible. The soft texture on the inside kills it for me. I know plenty of people who swear by that approach to omelet making. Good for them. I'll stick to my evenly cooked approach so I can enjoy my omelet.

Regarding the last question, I love roasted carrots in the oven. I just cut them like french fries, add olive oil, salt and sugar, and let it on the oven until they are perfect.
