I used to make hard candy for Ganongs in NB, Canada. in 1984. they made it on a larger scale. but it was still a lot of manual labor. we had a machine with a cooled table with mechanical arms, to cool the candy after it came out of a pressure cooker, and added flavor at that point. I think there was 30+ different flavours. I think it was 40-60 lbs price of candy.
Then we had a -puller- machine. and two of us would carry the candy over, and toss it into the forks. it would be made white. we stuck premixed blobs of colored candy to the main piece. and they put it a weird looking machine. the pulled and cut it. into various had candy colors and flavors. we made -Chicken Bones- which were longer pink cinnamon flavor with a dark chocolate center. and boiled sweets. and -Hum-bugs-. another type of hard candy.

Dude talks like he's the oldest confectioner in the US but has only been in business since the late 90s--and not as a confectionery or even a food-oriented business (source: their own website. How about interviewing an SME or family-owned business that has been around for quite a while longer next time ladies & gents? How about Hercules Candy as an example? At least they've been making candies with their own family recipes since 1905 (source: also their own website. I mean unless this was a sponsored interview.

Did anyone else feel a bit squeamish in the first few minutes when watching a cook without a hairnet hovering over the sweets? I know how much my hair escapes even when tied back and put under a cap so I was having awful images of candy with chopped up bits of hair in it. Other than that, I really enjoyed this video. I loved seeing all the old equipment and how effective it was. Love the use of a warm table and cool table. Who'd have thought there was so much to learn about candy making?

I hate when people just -go through the motions- when it comes to cleanliness/hygiene. There is absolutely no point in wearing food prep hats when your hair is down to your shoulders. If you are preparing food for sale and you want to have long hair, then you should wear a hair net. No one wants your long hair in their candy.

All I can think about is how much of that guys hair is making its way into the candy. My wife has curly hair like his and it ends up everywhere! Thanks for not wearing a hair net. Now Im going to be checking all my hard candies for the rest of my life.

Wow. that kids long-kinky-curly hair came too close in contact, while flipping, turning and molding all that qooey candy.
Shop owner, pleez have All employees wear a hair-net, while working in that commercial kitchen. thank u!

The amount of skill it actually takes to make candy is mind-blowing, I thought it was all just made by machines, I think it might be that way at some places but still, this is true talent

I LOVE GREG! And their candies are so good. I talk about lofty pursuits so much i get it as a gift sometimes. The black currant is my favorite.

That one dude has cool hair but I really wish he wore a hair net. There's no way of knowing how much hair is dropping into that candy.
