Celine could sing The Wheels On The Bus and I'd love it! All excellent picks! I remember the first time I heard All By Myself, and was blown away. My favorite song by her, though maybe not the most difficult, is If You Ask Me To. it bring back such good and such sad memories of someone who meant the world to me. and still does, even though he no longer shares this plane of Earth.

Laura Branigan also does a good version of The Power of Love, as does Cindy Lauper with I Drove All Night, and the Eric Carmine version of All By Myself is a classic. I love all Celine Dion version, but my favorite song by her other than It's All Coming Back to Me Now is J'attendais. She is great in both English and French and she sings in Latin and Spanish too.

Do you really know what's hard in a Celine Dion song? It's the passion, intensity and magic that she pours into her songs. Her songs might be singable, but they're incredibly hard to duplicate. Any version of her songs will probably sound karaoke-ish if anyone attempts to cover them, plus the technicality in her singing style is also inimitable.
