Honestly, I think Cal Kestis's poncho perfectly illustrates his character, especially at the start of the game. He's a Jedi, sure, but he's an outcast who's been scavenging for almost as long as he was doing his Jedi stuff, so he keeps the practical poncho outfit that he used while he was scrapping ships for parts on a rainy planet.
But his explorer's outfit demonstrates more of his practicality and the remnants of his Jedi nature, for his entire life as a Jedi was training in and for the Clone Wars, so he wears armor that is practical and defensive, but also light in order to move around easier. It's easily comparable to Anakin's early outfit in The Clone Wars.
He definitely should have had a mustache though, you're right about that.

Lego Star Wars (all of them) felt like Star Wars but that's probably mostly because they were doing stuff we had seen on screen already but the gameplay is so satisfying.
