it would’ve been so simple to keep the word Philly out of your mouth.
I have no problem with people calling something they’ve made a cheesesteak.
I have very big beef with all the thousands of idiots that want to call their thing a Philly cheesesteak.
This thing is such an abomination when you put the word Philly next to it.
Former Mayor Ed Rendell covered many of the issues that go into making a legitimate Philly cheesesteak so go find that rather than listen to me.
But trust me when I tell you this horrific sandwich is inferior in every way possible to any made in a 50 mile radius of Bill Penn’s head.
Every single one of the aspects is inferior.
Roll, meat, cheese, toppings, cultural integrity, and historical accuracy would keep me from even taking a bite. It looks horrible.

Adam, what's your opinion on what cut of meat to use for a burger It seems like the consensus on YT is just use chuck.
My problem with that is when my family owned a sandwich joint, we sampled Red Robin's supplier for their burger patties (they came pre-made, quite expensive. I don't know what was in it, but it did not matter how you cooked it, it was better than any burger made from grocery store ground chuck. I also experienced this with Vienna beef hot dogs, and buns. It seems like things from a grocery store are just inferior to restaurant supplies.

Cheesesteak: Whiz Wit
Overall execution: 7/10
-2 for mushrooms
-1 for basic bread
As a Philadelphian, some comments:
Mushrooms are blasphemous and are only part of a Philly Cheesesteak, not a true Cheesesteak.
Provolone or Cooper Sharp slices are generally standard in most places these days. Your implementation of Whiz is impressive.
I preferred chopped meat instead of sliced, but that's personal preference.
Please bake your own bread since I would love to see it! The best cheesesteak placed bake their own bread.

i think you should be more worried about the Kraft Cheez Wiz folks coming to kill you after you just doxxed their trade secrets. well done, sir! ;)
this is what my cheesesteaks look at home, but i'm too lazy to make the cheese sauce so i do what you were saying and just let the cheese melt overtop of the provolone. i find it helps the cheese melt more evenly if it's covered with some kind of glass lid like you'd use for a pot.

Gritty looks up from his traditional meal of discarded cigarette butts. Rag-oooo-seahhhhhhhhh he grunts. The frame of the 1994 Crown Victoria moans in protest as it hurdles 104 mph toward Tennessee. Rag-oooo-seahhhhhhh
A sudden flash and a peal of thunder shakes Adam from his slumber. Casting his eyes to the window, he catches sight of a silhouette made visible for a fraction of a second. RAG-OOOO-SEAHHHHHHHH

modern slave meals are so funny, their meat is so toxic you have to destroy it with heat until its black and carcinogenic dry so you cover it with sauce to imitate how its raw and bloody, what your senses actually crave. Then put it between grain sludge the opposite of what humans eat in nature, to produce short balding incels. NICE rancind machine oil gotta get those polyphenols hahahaha

Just to clarify, using the word hoagie is Philadelphian
No accent needed
Get a submarine sandwich or something if you hate us or something Adam.
You did a great job, but your vernacular is all over the place.
Hoagies are from our tradition from Hog Island.
Everyone else says submarine or hero sandwich.
Prepare to be cancelled
E A G L E S! Iggles!

The best onion trick I've found is from ThatDudeCanCook.
Look it up to be sure, but from memory:
1. Salt the onions for a few minutes. Ring out the moisture.
2. Cook onions with in a pot with a lid. Stir every so often.
3. The steam from the onions help to caramelize in 20 mins or less without adding anything to the pot.
Trust me. Game changer.

Coexist indeed!
But my cheese steak deserves bread of a slightly higher pedigree: bollio roll. Plus, I gouge out some of the inner mass to form a pocket, so I can fill it up a little more. YUM!
Thanks for the inspiration, I shall acquire the ingredients promptly. Also, I'll be duplicating your sauce process. I've never known of that method.

Had a (Provo. we had no idea what wiz was about, didn’t want to find out) cheesesteak at Reading Markets when visiting the area from Australia a few years back. One cheesesteak was enough between 3 of us. Memorable, very tasty, lot of it, but oily and, well, you don’t want one very day!
Phillywater = wooder In Australiawarder!

Honestly man youre stuff sucks now a days and you're so full of yourself. It was fun when you were inquisical and seeking information instead of preaching.

Just a reminder and warning. Philadelphians once assaulted a friendly hitchhiking robot that posed no threat to them. As a Philly area guy myself (now moved to the mountains, I can assure you this is a threat to Philadelphians. Best of luck, Adam. It's been a pleasure watching your videos and you will be missed. Also, Go Birds!

I am offended. Clearly you should go to the Asian market and buy thinly sliced ribeye meant for hot pot rather than try to slice it thin yourself. And yeah making sodium citrate is easy, but it's way easier to have bought a big bag of it for like under 20 bucks over 5 years ago and still not be through the bag

It always feels like philly cheese steak would be the perfect candidate for velveting the meat, some baking soda, water, starch and oil, some salt or msg and maybe some spices but they are really not needed in this. Mix, wait 20min and boom meat that's chinese take out soft almost impossible to get dry

In one tab, we have Adam Ragusea clinging for his life after begging for philly not to hurt him as he makes a philly cheese steak his way, in the other tab we have ordinary sausage shoving clam sauce linguini into a sausage machine with reckless abandon
life is good, this entertains the little gremlin

1: 40 a good splash of water helps at the start too! it jells the starches in the onion faster so they can start breaking down insto sugars more quickly. it seems realllyyy counter-intuitive but i swear to god i can make decent quality caramelized onions in 30-45 minutes rather than an hour or more.

There is no unfunnier internet trend then people pretending they care about their authentic food and just shitting their pants when someone makes something according to taste especially with extremely flexible historically poor people food. Lord forbid people find out about salting.

Adam it may be silly but I genuinely believe that wrapping the sandwich is actually extremely important for the final end-product. The steaming action and pressure melds the whole thing into a cohesive mass in a way that is difficult to replicate without wrapping. Also less messy.

3: 31 ended up using your tutorial to make a sauce for my Mac & Cheese the other day, the assorted cheese slice pack I got seemed to melt fine including the Sharp Cheddar and the Chipotle Pepper Jack which brought plenty of spice, here’s hoping the cheese wasn’t too old tho!

This is my first time encountering the trick for homemade sodium citrate. You can order sodium citrate, and some folks have citric acid sitting around for cleaning projects, but just about everyone's kitchen is way more likely to have baking soda and a citrus fruit handy.
