Lentil tacos with lime crema

One of Lauren's weeknight standbys cheap, easy, healthy and tasty. Recipe, makes 8-10 large tacos / small burritos 1 cup (200 g) dry lentils 1 small onion 1 small red bell pepper 1 ear of sweet corn (or 1 small can of corn) 1 4 oz (30 ml) can of chopped green chilies 1 heaped tablespoon (a 1. 25 oz packet) of taco seasoning (look for one with starch in the ingredients) 1/2 cup (120 ml) sour cream (or vegan sour cream, or 150 ml real crema or crme frache) 1 lime oil salt water 8-10 medium tortillas Cover the lentils with at least an inch of water in a pot, put them on high heat and boil them until tender about 15 minutes, depending on the type and how firm you like them. Drain them when they're done. If you have real crema or crme frache, mix it with the juice of the lime. If you have sour cream, mix in the lime and enough water to give you a saucy texture. Season with a little salt. Chop up the onion and the pepper. If using fresh corn, shave off the kernels. Put some oil in a big pan on medium heat and cook the onion and peppers until almost as soft as you want them, 5-10 minutes. Put in the corn, canned chilies and drained lentils. Stir in the taco seasoning, and any additional water if it doesn't look saucy enough. Taste for seasoning it might need additional salt. Warm the tortillas, fill with the lentil mixture, and top with the crema (plus maybe hot sauce and/or cilantro

Lauren actually has a big part of knife skills figured out from how she cuts the vegetables. A little tip for anyone who hates chopping: most of the knife skills you need is in the grip of the knife Use your thumb and pointer finger to hold the actual blade while the rest grip the handle. It gives you much better control and makes you exert less pressure on the knife to cut stuff. After you get your grip down pat its all up to muscle memory. Practice slowly and safely, the speed will come later.

The reason to make your own taco seasoning is because the stuff in the packets is way too salty. If you have perfectly seasoned what's in the pan, it'll be too salty after the taco seasoning. I like to have that control myself. Plus, you can customize your seasoning to your taste (extra garlic? extra cumin, and all those spices are immensely useful in other recipes so should be in your spice cabinet anyway.

The fastest way I found to cut bell peppers was the Gordon Ramsay method. Slice off the stem so you can lie the pepper flat with the top side down on the cutting board, then slice down the sides of the pepper. It will keep all of the seeds in the core and remove the step of having to scoop them out, leaving you with just the 4 clean sides of the pepper.

Holy crap, now I know why I have people that use Taco Seasoning as an ingredient in Taco Seasoning And yes I am serious I have seen several people do that it is generally to make it hotter but also assing it to various other seasonings that tend to dominate a country to make (X) Tacos wherein X is the nation of the seasonings origin.

I had all the ingredients and made it on my own just now. I used a red onion because I didn't have white and celery because it was going bad instead of bell pepper. It was incredibly tasty thank you for the cheap dinner Adam I wouldn't have been able to pull this one out on my own.

I just wanted to say I have tried this recipe and it is absolutely amazing, Im vegan so most of the time I just watch your videos for entertainment but these. these I could and indeed have made and I couldnt be happier Please do more vegan friendly recipes

I usually make them with chickpeas. Just dump a can of them (drained) into a pot, heat em up a little, add half a packet of seasoning (cause Im a baby and dont want the heat) and a splash of water to create a sauce. I usually eat them with shredded cheese:

Oh man, Adam. I don't know why is that, but can't get enough of your videos. I'm not sure what makes them so great, but they're always very informative and you (and your lovely family and friends) make me smile every time I watch your stuff.
