The city of Erlangen used to be one of the centers of brewing in Central Europe because it has a large mountain (it also helped that the railroad reached it in the 1840s, before that they had to ship it via canal) into which tunnels were dug - one of them even reached the other side. Ice would be put into the tunnels if the natural cooling effect of being inside a mountain wasn't enough and the beer could be sold year-round.
Eventually breweries started putting banks and tables on top of those cellars in which the beer was stored - something common throughout Franconia - and sold the beer on site, particularly in summer. A festival was born in the 18th century which is held to this day dedicated to drinking beer on this mountain. It is without a doubt the most important event in the calendar of Erlangen.
When artificial refrigeration was becoming commonplace in brewing, Erlangen breweries were slow to adopt and one by one they died, not helped by WW1 and the increasing tendency to form conglomerates after WW2. The last Erlangen brewery from the olden days shut down in 2019, but since two others have sprung up that keep the old names alive.

I followed your method for the 7 day fridge fermented dough, and the best flavor and texture profile for my palette turned out to be on day 3.
I love your videos about basic ingredients, recently your baking soda/powder video finally led me to make banana bread without having to throw it away. Could you so something similar for yeasts available?
In India, home baking isn't as common, would you be interested to make a video about baking without an oven (maybe in a pressure cooker/ closed pan) and the intricacies of it?

Good good brief history of the ice trade. We still have an ice house currently operating in my Southern city.
PS - Historical inaccuracies notwithstanding, Kingdom of Heaven is a quite a good flick, if, as others have responded here, you watch the Directors Cut, which restores the emotional logic and fills numerous plot holes. Seriously. In my opinion. I wonder what Adam's criteria are for a good movie? Anyway, I like his mini-histories.

Small tidbit about Kingdom of Heaven: it's a widely popular movie in the Arab world because of the Syrian actor portraying Saladin (Ghassan Massoud) and the positive portrayal of the character.
Thus I have no choice but to tell Adam that Kingdom of Heaven is the perfect movie and no ill-talk of it is allowed!

Not an American thing, but I noticed no mention of the Zeer pot. Basically, two clay pots, one set inside the other with a layer of sand between the two. Add water to the sand layer and put the lid on. As the water evaporates it will supposedly cool the inside to about 45F.

if these ice boxes, could use ice for a long time to preserve food, and keep things cold, i am curious if current fridges could be more efficient, if some of those old technologys would be combined with the new ones we have today.

In my home language, our word for refrigerator literally translates to ice cupboard (referencing the days of dry ice. Freezer is simply freeze cupboard. Lol
