Oven fries that are better than deep-fried? Maybe. Easier and cleaner? Definitely Thanks to Squarespace for sponsoring this video. Go to Squarespace. I suppose this is more of a techniques than a recipe. Take whatever potatoes you want. Peel them, or don't. Cut them into fry-like shapes, being sure to get roughly equal thickness, and cut them maybe twice as thick as you want them they'll shrink a lot during cooking. I do one large Russet potato per person. Boil them until you're afraid they're going to fall apart I do about eight minutes. Gently drain them and lay them on a pan wide enough to hold them all in a single layer. Drizzle on enough oil to thoroughly coat all the pieces. Shake the pan to coat the pieces and get the fries evenly distributed. Roast at 450F. Check on them after 45 minutes add more oil if they look dry, and move around any pieces that seem to be cooking unevenly. Roast them some more until they're brown and crispy, maybe another 45 minutes. Be careful not to overcook them very brown will taste burned. You can pull them when they're still a little floppy, because they will harden as they cool. The ones I made in the video are just a bit overcooked. Place kitchen towel or a couple layers of paper towel in a large bowl, and dump the fries in. Let the towel soak up the excess oil, and then whip it out. Season the fries in the bowl and then toss. I use coarse salt, pepper, garlic powder, chopped cilantro and grated parmesan

I am a Brit. and was a Chef. So thanks for the compliment about our Roast potatoes. We also put salt on our roast potatoes when they are about to go in the Oven. That helps them crisp up too. as well as you should not need to salt them when serving them, unless you like a lot of salt. You could also sprinkle them with herbs and put in some garlic cloves prior to putting them in the oven. That is also a lovely way to eat them.

this recipe is ridiculous. the reason people bake their fries is that they don't wanna drown their potatoes in oil. The amount of oil you drown your potatoes in you might as well do it the traditional way. what a waste of time. there are awesome recipes for baking your potatoes without adding so much oil.

I suggest using an airfryer It makes fries so crunchy without deep-frying and it takes way less time than the oven method. You can make other things while making them too: ) and you don't have to do batches

Question, my potatoes were nowhere near soft and fluffy at 8 minutes. They were barely cooked. I ended up boiling them for 15 minutes and I still didn't feel like they got to the point of being soft and fluffy.

I wonder if this would be good with deep fried fries too i tried it and it was amazingish i messed it up and put way to much oil i cod squeeze oil out of them but they were amazing other than that

Nice Brit here with one slight revision to your great technique: shaking them a little bit gently in the pan just after you drained them after the par boiling, will help get them even more fluffy

Why are people so scared of deepfrying? It is acrually a dry cooking method and is the best way to cook. You just have to own a thermometer and keep the temps between 325F and 400F

Im currently making fries using this method. I am 30 mins in to the baking part. Instead of russet potatoes, I used Sweet potatoes. Will update with my thoughts

Isn't it dangerous to heat oil in 450 degrees Fahrenheit? Olive oil has a pretty low smoke point. Can I use canola oil instead? If so, will it make that big a difference?
