That looks absolutely amazing. I know desserts dont perform as well for you, but the timing couldnt be better as I was just considering buying a cheap cake from Kroger
You said you could substitute out some butter for oil for a different texture - would you just replace it with the same amount of oil by weight?
Also you said any syrup would work, how do you think a saturated simple syrup made at home would work? I think i might try that instead of buying corn syrup just for the cake lol

If you cut three pieces of parchment paper and arrange them overlapping in a trangle-like pattern on the cake plate, making sure it overlaps the rim, then put your cake on top and ice it, you can pull those pieces of parchment paper off once you're done, and boom, the plate is nice and clean. It might seem wasteful, but it almost certainly takes less resources to make a little bit of parchment paper than it does to make a paper towel (especially if it's two-ply.

OMG -- back in the 70s the joke at work was if you sneeze three times in a row you had to bring in a yellow cake with chocolate frosting. When I saw this it brought back great memories, and lots of laughs. I brought in a yellow cake with chocolate frosting one day to make sure I was ahead of the game in case I did sneeze. Thank you so much for this. Your kids were so cute with the pac man references.

I think microwave power settings just cycle on/off for the microwaves at different ratios: High is always on, 50% is on half the time, etc. For softening butter, you can just have it on high and open the door every 5 seconds to turn the butter. Fiddling with the power settings is unnecessary. You're basically simulating a low power setting by opening the door every few seconds.

If you're microwaving for only 5 seconds then there's no difference between the power levels; the way that microwaves adjust power is by toggling between fully-on and fully-off, and 5 seconds is typically much shorter than the duty cycle.
If you ARE hearing the duty cycle turn off during that time then it means you're really just microwaving on high for, say, 3 seconds.

When frosting a cake, I spread a very thin layer while it is still warm. Then I allow to cool to room temp. The thin layer helps to trap any crumbs so they are not seen later.
Also, if you flip the bottom layer, the curvature will better match the plate so you don't have to trim. Who says the top has to be flat? Dome that sucker.

A chocolate frosting I came up with that I really enjoy is to bloom some cocoa powder in hot milk and fold it into the buttercream, i think it makes for more of a fluffier sort of mousse like texture over mixing in just dry cocoa powder

it's interesting to me that you can microwave you butter straight in the packet like that. Here in Australia pretty much every brand of butter I've ever bought has come wrapped in paper lined with a sort of foil like material

i cant tell exactly but is the framerate different on this video? Something about its feel seems different. Should also add its not a bad different, just something about the way objects or your hands are moving on screen
