Broiled chocolate chip cookies, v2. 0 Recipe, makes six large cookies 113g (1 stick) butter 200g sugar (1 cup granulated or brown, but I prefer 1 2/3 cups powdered sugar) 5-10g (1-2 teaspoons) molasses (optional, replicates the taste of brown sugar) 1 egg 10g (1 teaspoon of Morton kosher) salt (use 2/3rds of that if your butter is salted) 4-8g (1-2 teaspoons) vanilla extract 3g (1/2 teaspoon) baking soda 230g (about 1. 5 cups) bread flour (1 2/3 cups all-purpose flour is OK instead) 100g chocolate chips or other mix-ins Get the oven heating to 375 F/190 C, convection if you have it. Melt the butter. Mix in the sugar (and optional molasses) until smooth. Mix in the egg until very smooth. Mix in the salt (FYI, some people might not like their cookies as salty as I do, vanilla, baking soda, flour and chips. The dough should be a little sticky you can chill it for a few minutes to make it easier to shape. Divide the dough into six 115g portions and roll each into something like a golf ball. Space them evenly on a baking sheet no parchment paper, no grease. Flatten each ball into something like a hockey puck and tidy up the circular shape. Turn the oven off and turn the broiler/grill on maximum. Give it a minute or two to heat up, then put in the cookies near the top. Let the broiler brown the tops of the cookies until golden this should only take a minute, so don't walk away or they'll burn. If you're doing multiple pans of cookies, brown them each one at a time. Turn the broiler off and the oven back on to 375 F/190 C. Give the broiler a couple minutes to cool down, then return the cookies to the oven. Bake until they spread and look done to you mine take about eight minutes as this stage, but they'll take longer if you don't have a convection fan. I like the texture when they look a hair underbaked. Let the cookies cool and solidify before scraping them off the baking sheet.

are there people out there who piss their pants over the term pre-heating? like theres some duhhh well technically actually any heating is just heating dummy as though instructing someone to let their oven come to temperature before putting food in it isn't a necessary use case that warrants a term in the real world? like stuff that is maybe technically legally redundant can't still help to communicate or reify useful information in actual human communication because we aren't robot logic machines? wild

im a cookie specialist. its not hard to produce a good flat cookie - doenst matter what and how. the art is to stay as most possible as a ball that its outside crispy and inside soft. for that i use 20% almondflowel and additional 50% nutbutter to the recommanded amount. its the best cookie - ever! basically the cupcake jenna new york style cookie receipt with my changes. you get a tennisball that not spread.

Dude, they are alright but Claire has you beat by a long shot. Babish has basically the same recipe as Claire s with a few tweaks to the measurements, plus cinnamon, and minus the heavy cream. I ve tried a billion of these chocolate chip recipes over the last couple months and so far Claire s recipe with a little cinnamon, aged for 3 days, is the best of the best.

Why are people still making non-vegan cookies? There's no reason to expose yourself to the salmomella risk and cholesterol. You can undercook the centre of vegan cookies becuase you don't have to worry about cooking the egg, if done properly it's impossible to get an animal cookie to compare to a vegan cookie. If you disaggree you've been eating bad cookies.

My workflow when making food is on the scales weighing everything out and it s so much faster when I don t have to convert anything. For me it s to reduce the number of dishes and speed the process up. I guess working in fast food preparing pizzas on a scale I got quite used to it too.

I remain married to Alton Brown's chewy chocolate chip cookie recipe, which I first made 22 years ago and which have never, ever done me wrong.
That's not to say I've been a faithful husband in that metaphor, and I'll have to have a fling with this recipe.

I'm always confused by the word broiler. Misspelt boiler? Some sort of Bane Marie or sous vide machine? I'm guessing from the picture they're normal oven baked cookies, but that can't be right, because why would you use this strange word.

Thanks for doing the measuring! I agree with your take that it's more fun and faster to just eyeball ingredients a lot of the time, but as a cooking noob it really helps to have a point of reference with new recipes.

I'm curious about the ethics of chocolate since hearing that many chocolate companies purchase from plantations (and thus perhaps encourage) which engage in child labor and slavery. I'd like to hear your thoughts!

Version 1 has been my favorite cookie recipe since you released that video since then I ve gotten a lot more precise in my baking. Will be testing this version against my own weight measurements I ve noted
