One of the best tricks I ever learned for a beautiful golden brown grilled cheese is to use mayonnaise instead of butter, that is, to thinly coat the outside of the sandwich with mayonnaise, assemble the cheese and cook as a one piece sandwich, flipping halfway through.

Thanks a lot for the great video! Whenever I would make these in the past the middle would always come out soggy, so cooking each side first then adding the cheese after is a great idea!
