I love the idea of a baked French toast casserole for breakfast.
It allows you to Prepare a lot of other food products at the same time. It also allows wonderful smells of hot cinnamon and custard to fill the kitchen helping wake people up in the morning.
I usually use slices of bread like lasagne sheets in the casserole dish. There are some advantages to cutting it up into squares and some advantages I can see in leaving the bread like lasagne sheets. I think you have more advantages to the small squares Although if you leave them like lasagne sheets you can also put layers in the middle of them like chocolate or Marshmallow or strawberry jam and serve them like French toast sandwiches.
Another thing I like to do with this dish is to learn the very bottom with slices of banana and cover that banana with either golden syrup or maple syrup. If youre allergic to bananas I believe you could replace the bananas with either slices of Apple, or pear, or white flashed peaches.
I have also covered the top instead of pecans used a crumble base topping Mixing brown sugar butter and oats, or instead of oats. muesli or crushed up biscuits, or coconut.
My favourite way to serve this with a scoop of raspberries or mixed berries to the side. I also like it with home made stewed fruit like white flesh peaches, or Tamarillo. And if youre not allergic to bananas its amazing with grilled bananas and pineapple covered lightly with rum and maple syrup. A scoop of frozen softserve yoghurt is also very nice.

The instructions you give and information you provide is both easy to follow and entertaining.
I believe that your videos would be very useful in classrooms and as such I wish you would make them easier to obtain by putting them on iTunes. I would buy some - it would make it easier for me to ensure that I control what my student see and encourage others in your industry to provide good quality material. It would also address some of the issues around copyright.
Your videos would be very useful in classrooms not just for teaching home economics and cooking but also for math & numeracy and literacy. Jamie Oliver have amazing videos. but they are unsuitable to use in a classroom situation due to his swearing and juvenile humor.
