You americans always find ways to complicate the most simple of mexican dishes. Though you could've just reheated the tortilla to make it more malleable, making fresh tortillas would've yielded even better results. But who am I to give opinions on the food that I grew up eating for being mexican american, that style looks as delicious as what we eat.

IF. I make these I'd better use my small casserole because knowing me since the day I was born I WILL eat all of it! That looks like the kind of future favorite dishes I don't even have to try to know I will devour getting tunnel vision and hyper ventilation until the casserole is clean as a mirror haha! :D

I don't mean no disrespect, and I hope not to be misunderstood, but as a legit mexican I can say, we NEVER EVER use yellow cheese in any dish that uses chesse. For enchiladas, as an example, we usually don't use any cheese at all, in reality, cheese is just a garnish, and we use queso cotija.

The seeds having most of the heat is actually a common misconception: The hottest part of the pepper are the Shoulders, the little ribs the seeds are attached to.

Ya made me hungry for Taco Bill (not Bell, Taco Bill is an Australian franchise that does really good Mexican. There Spinach and Potato Enchiladas are so freaking good

These are Tex-Mex. Authentic enchiladas are dipped in Chile, fried, then filled. I like mine a little more visit so I fry them again lol. These look fine though

I grew up rolling the tortillas, but in high school one of my classmates suggested layering them like a lasagna. I've switched to that method ever since.

yo you can just put the corn tortillas in the microwave for a minute to make them flexible hell depending on the package you can just throw it in there
