I don't know what they're called, but there are folded metal taco holders out there somewhere. Some restaurants here in Austin use them. Not something you'd have on hand for a one-off, but nice to have for putting multiple tacos together in general, not just choco tacos.

I'm not quite sure why, but 11: 42 was super crazy for me. The way Claire said Here are the shells by the way cut straight through the screen. It felt like I was right freaking there and Claire was talking directly at me.

Sorry to say the taco shells probably won't stay crisp - they'll absorb the humidity in the freezer over time, and go soft like the store-bought ones. Especially if it's a frost free freezer.
