These are terrible. I had to make them twice in two days because my brother and I ate the entire first batch ourselves, and I had to make more for the rest of our family. I also now have lost the annual struggle to work out what to buy my family for Christmas - heads up guys, you're all getting these caramels. Also - if any of you look forward to trying and trying a new recipe, only for it to fail - these are not for you. I made an entire batch in less than 25 minutes, and they worked perfectly. okay, all jokes aside, this is probably one of my favourite recipes at the moment: -) next weekend I'm trying out the plain caramels, I have this idea that I can turn them into eclair toffees

Anyone else have a problem with their chocolate scorching? I think there might be a problem with my candy thermometer. The caramel was harder than I expected. I had to warm it up in the microwave to cut it. The whole batch tastes a little burnt, but there's 50 worth of CBD oil in there, so I'm not throwing it out.

Hi Jemma, I tried these 3 times and all 3 times the caramels were hard and would crack. Any troubleshooting info that might help? Ive tried several of your recipes and they all work great. Maybe Im missing something. Im also in the USA so Im converting temperatures.

These chocolate caramels look delicious Quick question when they are completely cooled are they a soft or hard caramel? Also I noticed the Cupcake Jemma towel at 2: 09 behind you. Are you starting your own merchandise brand?

Caramel are definitely one of the best thing to have ever existed Other than that, nougats Can you teach us how to make them Jemma? Your recipes are all fantastic and I'd love to see one from you xo

What a great recipe Jemma Thanks for sharing. How long can it last and should the toffees be refrigerated? I made it with 72% dark choc (coz thats what I had on hand) but oh my How delicious

It was fantastic and chewy when warm. But it became rock hard once it cooled down. 127deg c is the hard ball stage. Is it possible that chewy candy should be at soft ball stage 115 deg c instead?
