20 Minute Veggie Noodles

The best kind of weeknight supper. Easy vegan noodles, absolutely packed with veggies and bursting with flavour. I've been loving this dressing and using it for everything, plus the brilliant Madeleine Shaw shares her top tips for eating well when you're busy, her store cupboard musts and her fave ways to use leftovers. You'll need: 100g buckwheat noodles 100g of shelled edamame 1/4 red cabbage, shredded 2 pak choi, shredded 200g sugar snaps peas 1 bag of carrots, julienned 1 pack of spring onions, finely chopped 100g cashews Salt and pepper dressing: 1 tbsp Rice vinegar 2 tbsp Tamari 2 tbsp Maple syrup 1 tbsp Sweet miso Knob of ginger, grated 2 tbsp Toasted sesame oil 2 limes Toast the cashews in a pan for 3- 4mins until golden, remove from the pan and pop on a plate. Allow to cool. Rinse the buckwheat noodles and cook as per pack instruction, then rinse. Julienne the carrots, finely slice the bok choi, red cabbage and spring onions. Mix the dressing together. Fry the edamame in the frying pan with some sesame oil and salt. For 5 mins until golden. Mix everything together and top with cashew nuts. I just made this and its honestly one of the most delicious meals Ive ever had I added a few more veggies like kale, bell pepper, radishes and red onion because I had them on hand. I used slivered almonds as I was out of cashews. I used lentil flour noodles as I didnt have any buckwheat noodles and I charred my bok choy before slicing it. I didnt measure anything I just used as much as I was craving and it turned out perfect. I was going for 4 servings worth but I wolfed down half of it already Sooooooo delicious

Cant wait to try this, Ella! Looks so quick, easy, and delicious. Have you done a basics/staples video before? Im not sure Ive seen one from you before. Im always so distracted by the jars in the background of your videos trying to figure out whats in all of them lol

Sorry but the music is overpowering your video. I had to turn up my sound really high because I couldn't hear what you were saying but the higher I turned it up, the louder the music became. You have soft sweet voices, you don't need the music during your presentation.

Any chance of getting the full recipe in writing? I cant do videos, especially with background music due to the cognitive symptoms of my ME. Would be great if your recipes were made accessible for all.

I LOVE how versatile this recipe is and the flavors in the dressing! This is totally going to become a staple for me! Also I had NO idea you could freeze ginger! Brilliant!

Can you please list the full recipe with measurements? what is the point of recipe videos if you're not going to share the measurements? not really helpful!

Great recipe. I will try it. It was good to have a special guest (you can use their recipes and tips. I like Brussel sprouts and all green vegetables.

Noodles are my fall back meal when I'm in a rush or don't have anything in, but I prefer to use peanut butter in the sauce rather than the nuts.

Looks yum. Do. you think honey or agave could be used in place of thr maple? Don't like buying non essential new ingredients
