You're talking to someone who almost always has fresh kale in the fridge. I love the stuff. But I've -never- heard of massaging it, and generally when I use it in a salad I steam it lightly to tenderize it. Well tomorrow it's gonna get brutally molested. This will be interesting. The dressing looks killer!

used your Chick-Fil-Gay recipe today to make a kale/fried chicken/caesar wrap (with other stuff in it too, of course) and came across this video. The tip on massaging the kale was exactly what I needed! Thanks again - I love how your recipes tie comfort food into more adventurous dishes - especially those on the healthier side: )

I may have to try this recipe. Been attempting to use Kale a bit. I made a lovely Pizza with it. Wilted it down, put it on a pizza crust that I had olive oil and roasted garlic on, topped with lemon pepper chicken, and lots of Mozza. It was delicious though I don't think I wilted the kale enough.

My only experience with kale is eating kale chips. I thought those tasted like cat butt, or how I imagine cat butt WOULD taste (they're quick so I can only speculate, mwak mwak. The aftertaste of them, against all odds, was somehow worse. Does raw kale have the same strong flavor and aftertaste?

I use kale to make a home version of zuppa toscana. If you haven't had it you should give it try. It's pretty darn tasty. I also use kale to make potato's colcannon which is a popular side dish in Ireland.

Feta was the first thought that entered my mind, but I think a good bleu cheese would do real well with it, too. It's a mix of a lot of flavor, and I think a milder cheese would get lost.
