Pesto is one of the most succesful recipies with my students in my summer cooking class: D
They're usually 20-30 yo american/australian guys and gals, so they're looking for something easy to prepare at home with little to no effort; )
The most important thing is the quality of your oil and basil and blend the ingredients with the -pulse- function of your food processor, it avoids heating the leaves because the heat tends to darken the leaves altering the aroma of the basil, the final result should be a bright green sauce

Fresh basil is ungodly expensive at the grocery stores near me and I don't have enough outdoor space to grow enough basil (I currently have a single plant, which produces just enough to dry basil for later, so a pesto-ish I've made before was with baby field greens, baby spinach, garlic, salt, pecans, and Parmesan. It has a very earthy flavor, as opposed to an herbal one, and goes great with tri-color pasta.

I have a friend who got -pine mouth-, and it screwed him up for a week. I'd never heard of it, neither had he, and the result is that we're both now afraid of pine nuts. LOL
I've been looking for good recipes for pesto, and these look great. Chef Baby, however, seems less than impressed with the results.

Thanks for the European shout out! American scientists use grams and meters for weight and measurement, so in my opinion we should just stop the nonsense and all convert to meters and grams. :) Most countries in the world already use it!

I didn't know you could replace the pine nuts. I have had pine mouth before ugh. Also I grew an allergy to pine nuts so im going to try this with pecans.

Great recipes! Whenever we make a big batch of pesto we always freeze it in ice cube trays to easily add it to whatever we feel like adding it to.
