I love it when Carlos shows up, and I love Carne Asada, going to have to try this, with a big pot of re-fried beans. I might have trouble finding prickly pear this far North but the rest should be doable. I have your -Pollo al Carbon- chicken marinating in the fridge right now, going to grill it up for supper tonight. yee haw. Love your shows, thank you!

Grilling the cactus is a nice touch.
Btw, adding chorizo is kind of cheating. Adding chorizo to your meal is going to make it better no matter what the meal is. That's how bacon works and that's how chorizo works. =)

I think you got skirt and flank mixed up. Flank tends to be thicker, and skirt is thinner and more marbled. It looked like you had skirt steak there. Unless you pounded the steak out that is.

btw, thanks to Carlos for mentioning Worcestershire sauce. Yes, a lot of Mexicans, Mexican Americans use it! Try a splash of it in your guacamole.

If I had to live off of one cuisine for the rest of my life it would be Mexican food! I'll have to make these up for myself! Thanks!

What does cactus taste like? Or does it have its own unique flavor. Don't think I can get them where I live, but I'm soo curious: D

Good job. looked delicious. Try marinating the meat in mojo de ajo, beer, lime juice then grilling it. Also a good way to make carne asada.
