I like the idea of preparing the potatoes ahead of time, this would make a great breakfast dish just by itself. Maybe some good comfort food with black eyed peas with smoked ham hock and some crawfish cornbread. This is a very versatile dish, I can think of several good ways to pair this. It looked great, I bet it smelled and tasted wonderful.

Thanks for the recipe, Hilah. I bought baby potatoes, bacon, fresh rosemary, grainy mustard, and for good measure I also got parmeggiano reggiano and some slivered almonds because the world is my pickle and I gotta add extra shit on my taters 'cause I can! my motto is -you do you, boo! -

This has all the makings of a classic! I've done a basic version of this from the U. K, and it was right good, but this just takes it to a whole new level. Gotta do it! I've been getting into growing my own herbs lately, too, and thyme can be downright prolific!

Have you tried fried mashed spuds. Absolutely awesome. You have to do the mash completely, milk, butter whatever you like when you do a mash. Best if the taters are left in the fridge overnight. Then re-cook then in a frying pan.
