You are absolutely a goddess. I have been watching your cooking videos forever, and have always loved them. Oh yeah, I grew up in south Texas and have known full well how to make tamales and tortillas, etc. for many years. But I never knew how to make this sauce! So I take my old, old white ass to HilahCooking. com and read up on it. OMG my Tex-Mex sauce is PERFECT. THANK YOU. I now need to set up an altar to Hilah.
I know you are tired of doing cooking vids and feel you've covered it all, but I do hope, even though you are in Cal now and whatever, you revisit that. Even your basic stuff. just do a -new- version. What the hell, right?
PS - big secret here: I no longer use chili powder at all. I replace that shit with just paprika. Stuff is just as good since I'm now In BFE and my digestive system can't take hot much any more anyway. I mean the normal store chili powder is just low quality, OLD ASS hot pepper mixed with a bit of OLD ASS onion and garlic powder. So who needs El Patio when just using paprika fools your eyes and palate enough anyway? It's just pepper powder. And peppers can just as well be -not hot- as they can be hot. That's what chili means. Pepper. Bell peppers, sweet banana pepper, and pimento peppers are still peppers.

I'd like to try one of those pans, how do you spell it? BTW to stretch out the meat sauce you could add some rehydrated TVP. Also be good for when your little Podling is getting into solid food. If he likes stuff like tacos bulk it out with TVP. High in protein, zero fat or cholesterol, high in fiber. Guarantee he won't even know it's there.

Hi Hilah! I immediately tried this as I was intrigued by the sauce. Using chile powder instead of dried anchos is genius. I don't always have anchos on hand. The sauce turned out just beautiful. smooth and flavorful. My only substituion was that I used green onions instead of raw white. An homage to my Abuela

Doesn't putting oil on the 'comal' (to heat the corn tortillas) leave a slight sticky residue on the comal afterwards? Even after washing it really well, multiple times, there always seems to be a stickiness to that comal. (or am I the only one on the planet that encounters sticky scenario)

Did you really move to California? Our son, who has lived in Agoura Hills, CA for 30 years is selling his house and moving to either Austin or the DFW area. He's a legal/medical consultant. He says the cost of living and doing business in Texas is about half of what it costs him there.

Btw, You'd be so much more entertaining to watch on the FoodNetwork than Bobby Flay, Giada, Contessa gal, Spiky haired dude, etc. Hopefully someone will take note that you'd bring in some serious ratings. (It's the personality that makes people tune in) duh.

Haha in retrospect it was nice of your dad to even be making you guys dinner. My dad would have never cooked or attempted to cook lol. These look bomb! Since I'm lazy I'm going to try these with canned chili ha ha and NO onions for me either!

awesome, i love these! im a Texan in LA and im glad for this. I usually have to drive to Whittier at Arturos Puffy Tacos for eats like this! now I can do it at home and wash it down with a BigRed. thanks!

OMG I freaked out a little bit when you put flour in your cast iron! But I just got mine and it definitely isn't seasoned enough for that yet! Yours is definitely well loved and seasoned!
