So I left some nice beef in the fridge and forgot about it. Some fruit made some slight punctures in the package and this was right after I had cleaned out my fridge. After looking at a bit I found that the air was being dragged over the box of baking soda deodorizing and drying it then into the steak. I found it around 3-4 months after it had gone in (90-120days) and it was super funky but great. That was my accidental dry aged steak, I'm still amazed it didn't go bad without salt or proper protection. Props to the local butcher at my super market for keeping an extremely sanitary butchery, thanks to my girlfriend for making me clean my fridge, and thanks to my mom for recommending I keep a box of baking soda in there. I think without the combination of all three of those things I it would not have come out the way it did. I trimmed it up added a bit of seasonings and decided to give it a try since I had actually been wanting to try dry aged beef my self but thought I had to get all kinds of things, get high quality meat and treat it perfectly to keep it from going bad.

You know its good beef when it has that real beefy flavor, and you know it's great chicken when it has that real chicken flavor, and you know the turkey is delicious when it has that real turkey flavor, and you know the pork is fantastic when it has that real pork flavor.

So this restaurant opens and shortly after the building floods and they are closed for 3 months? Is that something you have insurance for, to make up for lost income, or how could any place stay in business after that.

I dunno how it took me so long to realise this, but Nick uses the same vocab for every place he goes to. The restaurant are pretty much interchangeable if he keeps describing them with the same description.

Claus Meyer a god of Nordic cuisine, don't make me laugh, it hasbeen many years ago he was hot stuff. Most, if not all, of his places in Copenhagen have been fined several times due to unhygienic practices.

I don't know. be worried to eat meat that has been essentially rotting for 180 days. more worries it will taste so funky that I wasted a good chunk of change on it. But, have 30 day dry aged on my to do list.

Sometimes I wonder if nick sits at his computer and reads thru all of these comments about him, while sobbing quietly as he slowly eats pieces of spinalis dorsi and washes it down with a glass of Opus One.

you know. you guys colonize half the world way way in the past in order to get herbs to make old meat taste better. With the invention of the freezer, why is this trend of eating old meat not dying?

i think by now everyone can do his job, go there, eat the meat, says some facts, say the words; age, funky, notes, tender, fall apart, intense. and put them in sorta coherent sentences. make money
