This is not unlike Ohio Valley pizza. The key difference is that you put the cheese on AFTER baking. Put the dough down, brush on sauce, put toppings on, and bake. Take the pizza out and top with cold shredded Provolone when the pizza comes right out of the oven. The cult status in my hometown is insane! Personally, I m not a fan.

Suggestion for Chef John: make the Detroit style pizza dough and stretch it out. Slather on blue cheese dressing. Pile high with shredded chicken, tons of mozzarella, and wing sauce. Then bake. You'll thank me later.

It's like being able to make a national pizza chain with weird-looking roof sheet pizza named after the most famous creature to ostensibly live in the Pacific Northwest at home! And since that national pizza chain discontinued that pizza, and it was one of my favorites, this is a boon!

Pretty much how I make mine except I use cider vinegar instead of sugar, a slosh of red wine (1/4 cup) and a dash of balsamic.
The secret ingredient is Paprika (not smoked. It needs at least 1 hr to cook the paprika.

It s clear there was a lot of study on the Buffalo style pizza. WNY resident here and the cup and char pep is worth a mail order! Or you could just order a full pie, Bocce Club Pizza will mail you one!

i use 75% water to strong flour, perfect crust every time, 200g flour per pizza 1g yeast and 2x 1h rises, pinch of sugar, salt, bit of olive oil, whatever, main part is 75% water to strong flour

you're going to want mozzarella made in the erie county area with that pepperoni. the water used to make it gives it a taste far better than what you get in california.
