ChefJohn. please stop stalking my wife and I. You published your fritter recipe the day we were talking about getting fritters AND now we just came from a class where they had store bought pumpkin spice snicker doodles. We said how you we could make them better and BAM You drop a recipe on us. Humbly your fan, James.

I made cookies last week and since I don't have an electric mixer it is so nice to see Chef John validate all of annoying parts of creaming the butter by hand. Just follow Dory's advice and just keep stirring/mashing and it will all come together after 5 min or so.

If you know anyone going to Mexico, ask them to bring you back a bottle of real vanilla from there. It's night-and-day from the grocery store fake vanilla from here, and costs less than the 'real' stuff sold here. It's one of the best gifts I've ever gotten.

Actually Chef John there is a great coffee beer made in Houston called Rocket Fuel. It's by a local brewery called 8th Wonder and it's a great mix of beer and Vietnamese coffee. You should try it if you can.

hello chef. so at 1: 00 you said baking soda+cream of tartar=baking powder. does that mean baking powder is a substitute for those 2 ingredients? I can't find cream of tartar anywhere in stores nearby

As a homebrewer and general beer nerd I applaud you for calling out pumpkin spice beers. They have turned fall into the dead zone of seasonal beverages. Fight the good fight, Chef John.

Great recipe Chef John also quick question what type of baking tray is that you use? I ask because I noticed the cookies didn't stick on the tray like other baking trays.

Yes I made pumpkin spice snickerdoodles with my ESL students last year. It will be super helpful to have a video this year of the process that I can show my students.
