The original (from Matt's on 35th and Cedar) is the Jucy Lucy without the I. There are cantankerous purists here that are quite happy to point that out and lecture, and there is a whole controversy as to who did it first, but they all agree on the spelling. I think it has a lot to do with cold winters and hot burgers and the same kind of fanaticism that tropes the Vikings vs. Packers rivalry. Really, the burgers are pretty good, but it's the experience of eating one in the Matt's dining room that's the draw. Otherwise it's a stuffed burger, and there are many others better. BTW, if you ever decide to visit, I would be more than happy to take you to Matt's for a Jucy Lucy. :)

So my only complaint with this video is totally subjective. After many years following Chef John, this is my only issue of contention. When I make burgers, it is always done with American Cheese. For a burger, this bastard cheese shall except no substitutes; not even the irrefutably superior cheddar being used here. If it's grilled cheese, or a burger, use American, for everything else any other cheese is better. I still love you Chef John, even if you're the burger veteran that's not using American.

Ok, why can I not like this 100 to 1 million times? I did this on my BBQ on the topside of our boat last night and my husband nearly fell overboard while having a food-gasm. I partially froze the cheddar, I added some frozen crumbs of blue Bleu cheese. used your bacon jam that I had preserved 2 months ago. and we had ourselves some certified food porn burgers. damned if I didn't win my way to my man's heart through his mouth hole THANK YOU CHEF JOHN

I made these last night, not even knowing he had this video out there. I used havarti, browned them in a skillet, then finished them in the oven and then the broiler. I used a garlic/onion/pepper seasoning, and a tablespoon or so of A1 sauce. They were juicy & yummy And I just got to thinking that I could have squeezed out my sauteed mushrooms and stuffed them in with the cheese Would have been less messy eating.

Holy shit. I am not good wife material. My burgers-to-be are currently 'resting' (or should I say lying in state. They look like 8 pizzas and I'll need two frying pans. Damn, I should have made them smaller, but it's done now. Just as well my good man is a hungry one and a very good cook or we'd both be dead by now. He's either going to laugh or cry when he sees this effort.

Back in the mid sixties, I worked in a greasy spoon diner. One of my customers had me make this burger for him every time he came in. The only addition to your recipe was onions on the inside with the cheese. I'm definitely going to try this the next time I do burgers. Your video reminded me of how good they were.

Just finished eating them and they were amazing. So good. However, I had non of your hardly pronounceable sauce and used soy sauce instead and it still turned out nicely. So good, and I totally agree. It is a big difference between this and having the cheese melted over the top.

If avoiding American cheese, you can get closer to the melty textural result of the real Minneapolis deal by using mild cheddar together with some muenster or jack. And making it grated works perfectly for combining cheeses. The 5-8 Club has multiple choices of cheese.

I dont think that you have the meat/cheese ratio correct. Also, if youre using ground meat that you did not grind yourself, medium rare should never be an option. Food safety dictates that the internal temp must reach a minimum of 160 degrees.

Oh my gosh, I work at a restaurant in San Francisco, and I agree that American cheese is illegal (We are violators, but hey I don't make the menu) Wonder if I'll ever see you around Been a fan for a while. (: Also, I'm making this tomorrow. :0
