Not quite. Doner is minced lamb or minced lamb and minced beef mix. Gyro is slices of pork. Both are spiced and built on a vertical grill stick for a rotasserie and are flame grilled. Later thin strips are cut from the rotasserie as the meat is cooked and is ready to serve with sliced onion, tomato and cucumber wrapped or placed inside pita bread. Gyro also add Tzaziki and Feta cheese to the mix. Doner adds garlic sauce or chili sauce. Both can also add Greek peppers. Of religious reasons, pork is not served in Turkey and the rest of Middle East. Greece has no religious problem with serving pork as the rest of Europe.

After baking, I just leave the loaf in the same baking dish/pan with all the fat and juices, let it cool to room temp and stick the whole thing in the fridge. When I need to fry some up, I just take a few slices, along with the juices and rendered fat and add them to a pre-heated cast iron pan. No need for added oils (unless you want to gently heat up some pitas beforehand in the same pan.

I made this tonight for dinner and the meat came out flawlessly It was exactly like a restaurant gyro but better; gyros in New York City can be ridiculously priced and then some places dont even pile on enough meat This way, you can make it precisely how you like it. This is definitely going into my standard dinner rotation from now on.

I love your humor and your cooking skills, I'm going to try this. I make chicken souvlaki, I tzatziki sauce but I have a secret I do, maybe you would like. after adding the tzatziki sauce, sprinkle some Chile powder, and a little paprika, and it gives it a little kick. maybe you would like to try. Came across this while looking for tzatziki sauce and decided to do so by searching recipes for gyros period instead of just the sauce. For anyone who have never tasted lamb, perhaps you could visit a sheep farm or, if there is a state or county fair in your area nearby, visit the sheep barn there. Inhale deeply the smell of sheep st, then imageine that in your mouth. That's right, lamb and mutton both taste just like sheep st smells Enjoy.

Chef John, I can't thank you enough for your recipes. I consider them a starting point for my own version. For example, my wife has celiacs so I substituted the instant mashed potatoes you recommended last year for bread crumbs. I used 2 lbs of lamb and 1 lb of beef. I added 50% more of every ingredient.

This is actually called donair not gyros which is typically meat cut off a spit. Donair is made with different meat and spices which is shown in the video. This is the first time Ive been disappointed with your videos. Nothing wrong with donair but I was expecting something different
