In case you re not familiar with riggies, it s a Central New York specialty featuring rigatoni pasta tossed with chicken and peppers in a spicy tomato sauce, and when baked into a casserole, it s a perfect way to use up that leftover Thanksgiving turkey Caty: My food wish: I'm going to have Thanksgiving dinner with a friend who serves duck, rather than turkey. I am always the lucky recipient of the leftover fat. She doesn't want it, and none of the other guests do, either. (I don't understand that. but, I'll take it) I'd love to see your technique for potatoes prepared in duck fat, that results in that glorious crispy exterior, and creamy interior. Any other duck fat recipes would be welcome, too. I won't be able to join a chat tomorrow, so I'm leaving my wish here.

My wife ordered chicken florentine from a local restaurant and it was delicious so I went to see if chef John had a video on his take and sadly I couldn't find one.
Chef John you need to do chicken Florentino!

I always used to make turkey and andouille gumbo, after making stock with the bones. I also made turkey enchiladas as well as a pot pie. Sometimes I had enough left to make tetrazzini. That looks delicious though

If you're going to bake it in the oven in that much liquid for 45 minutes, just put the pasta in raw, reduce the baking time to 35 minutes, and Bob's your uncle. one less pot to clean!

I moved to Syracuse a few years back and it's cool to see your take on riggies! I'll probably make a chick'n version (with fake sausage) since I don't eat most meat, though.

As someone who has lived in Utica NY where chicken riggies originated, I'll say that the preferred peppers are cherry peppers. I've never seen olives or sausage.
