I had a few drinks while making these, so I could enjoy them as the food Gods intended, which is slightly drunk. At least that's one theory for how this dish got its name. The other theory is that it was at one point made with wine, but that's not nearly as entertaining. noob19087: PSA: Cheap dark soy sauce is really just light soy sauce with added caramel colouring (same stuff that makes cola black, molasses and corn starch. You could just sub it with a bit of molasses, but if you want to go the whole mile you can caramelize some sugar until a dark date colour and use that. It won't taste sweet at all at that point. That's what gives Chinese red braise dishes their colour.

I just watched your asian garlic noodle video and made it into drunken noodles. I cut the big sheets into squares. Added mushrooms, bok choy and green and red bell peppers. Sauteed some shrimp in the sauce and served it on the side. It came out sooo good! (According to my family not just my word lol)

Chef John must have had a couple when he secondarily named this dish ( spicy Thai-style rice and chicken noodles. I kept wondering when the rice would be added! Perhaps Thai-style rice noodles WITH chicken would be more accurate?
You are, after all, the codifier, of your misplaced modifier!

Okay whoa whoa whoa, I respect you Chef John but saying using a wok makes no difference? What? It absolutely makes a difference, wok hei! The flavor that is being lost is a BIG DEAL. Tisk tisk Chef John. Give me an address I ll send you a carbon steel wok free of charge man.

I made something similar but without the chinese brocolli. I used regular broccoli but not the stems. I also browned the chicken, removed it, then added it back later. Browned chicken always tastes better to me. An extra step but I think it's worth it.

Chef John, maybe the helicopter pilot & crew watched your video on these drunken noodles & were looking for your house to see if you would invite them to land & eat!
Great video. I plan on trying to make this soon.
Much love from Mobile Alabama.

That looks delicious! Although it would be best to add the sesame oil right at the end as sesame oil is more for garnish/ flavour rather than a cooking oil as it can get a funky taste when heated too much.

Dude! ditch the woke crap! The lawyer thing might have been a joke but you went too far. Drinking while cooking is not a damn crime. If you keep it up you will ruin BBQ for the whole nation.

I'm allergic to shellfish is there a substitute for oyster sauce? I don't even know what that tastes like so I have no clue what's a good replacement. Worcestershire sauce? Some anchovies?

Uncle Roger would have some issues about you not using a walk or saying that you can replace Thai Basil with Italian basil. You don't want to get on the bad side of Uncle Roger.
