Don't like the fact that Casa Mia won. I think those two chefs are far too pretentious. They cook what they want to cook and ignore what customers are telling them about the food. Mother is far too defensive with the customers. Also doesn't tell the chefs when people are sending stuff back. She paid way way over the odds for crockery because the boys might not like it. What does it matter whether the boys like it or not? She paid 2 pounds per plate when she could have paid 15p. What a waste of money.

When you find yourself overstaffed you need to start sending people home, pulling people off the floor, or setting them to cleaning and shining surfaces. I don't know what their prices look like but I can't imagine that they can keep their labor costs below 20% with that much staff on the floor. On slow days one of my first kitchen managers, back when I worked in kitchens, used to hand out towels to the teams and tell us to make them dirty.

There are safety codes and standards when washing dishes. Last lesson, If your dishes are dirty you fail and close the restaurants. They didn't really seem to improve anything and I think the one they went up against that got eliminated actually improved. You can tell they were like oh shit when he arrived. The two correct restaurants got through. Gordon seems to be going for the new stylish restaurants. The two that didn't get through are a bit of a throw back. I myseld would probably eat at the two that didn't get through first before the others.

I had a feeling Gordon would choose Casamia. At least now we know they can actually cook instead of depending on their sous vide methods for every dish. I thought the young brother chefs would s&&t their pants at the butcher trying to decide what meat to choose for the main entree.
