Twice Baked Potato with Egg on Top

Baked stuffed potato with egg on top is that kind of dish few could refuse not to mention that is easy to make, healthy and so tasty. A perfect recipe for breakfast or brunch. Ingredients: Makes 4 servings 2 medium/large potatoes 1 medium yellow onion, diced 4 small eggs 3 or 4 cloves of garlic, chopped fine 4 oz. (100 g) cheese, grated 2 tbsp olive oil or 1 tbsp butter Fresh chives, chopped Salt and freshly ground black pepper Directions 1. Preheat oven to 200C (400F. Scrub potatoes, pierce them with a fork and put them in the oven rack for 30-40 minutes until soft. 2. In a large frying pan heat oil or butter over medium high heat. Saute the onion with garlic for about 5 minutes until soft. 3. When the potatoes are cool enough to handle cut potatoes in half lengthwise, scoop the interior out of each leaving about 1/4 inch shell of potato flesh and skin. Add the scooped-out potato flesh, grated cheese, salt and pepper into the pan and stir well to combine. 4. Place the potato shells on the baking sheet and feel them with the mixture. Press the mixture with a spoon so a whole is formed to make space for the eggs. Sprinkle chives on top and crack an egg on top of each stuffed potato. 5. Cook at 200C (400F) for 10-15 minutes until the egg is set. The whites are set while the yolks are a bit runny. Enjoy For the full recipe:

Ooooo. definitely going to try this for tea. I love sering new ideas to try out on my sons. Thanks be to God they sre healthy teenagers and will eat almost anything that doesn't contain tinned spagetti, liver, swede, spam, or parsnips. They are pretty emphatic about those things being totally unacceptable on a plate, but then, so was their Grandad.

It may looks good but its not delicious. I just made this for lunch and I throw it away because the filling was just not good at all The onion mixed with garlic was too strong. And watch out when you put the egg on top of the filled potato because it can slip away, what happens to me a couple of times. Anyway no one liked it.

these came out amazing too (second recipe of yours that iv tried. Only modification I did was to mix the white n yellow before pouring into the potato because my family doesnt like runny eggs. Would you know why the potato skin becomes so hard? Is it supposed to be that way? Wondering if I overbaked them. .

Studies have shown that more than 79, 000 people get sick each year from ingesting salmonella in raw eggs and 30 people die and to me those eggs look raw still, I think I'll pass on this. I always cook my eggs thoroughly as recommended: -)

havent made this. but i would suggest waiting to put in the cheese first: )let the mash potatoes brown a little, otherwise you'lll have that burnt cheese flavor my cat likeswelcome

good concept trying it with the broiler for the egg part for 6-10 mins so the egg gets cooked but not my potato so much in the middle so I end up hopefully with perfection.
