Potatoes and fish have always made a good match, this flaky tender fish with crispy potato crust is one of the best ways to serve them. I paired the fish with a lemon sauce that I really love, its strong lemon flavor and smooth texture is simply wonderful. Enjoy Makes 2-4 servings For the Fish 20 oz (600g) potatoes 2 tbsp (about 4g) chives, chopped 1/2 tsp (2g) salt 2 tbsp (28g) grapeseed oil 2 tbsp (28g) unsalted butter 2 sea bass fillets - (about 6 oz-a170g each) Salt and Pepper Lemon Sauce peel from 5 lemons 1/4 cup (56ml) olive oil 1/4 cup (60ml) water 1/2 tsp (2g) salt 1 tsp (5g) sugar 2 tbsp (30ml) lemon juice

I made the lemon sauce today OMG i used a food processor instead of a blender, I didnt get the same texture u got But WOW Just delicious It reminds me of the citrus vinegrette at PF changs, and i used it on salad Im saving this to my cooking notebook

This really looks delicious, and aside from bass what other fish would this recipe work with? Also did the water from the peels get discarded or can even it be used for anything else?

Would this recipe be suitable to make ahead freeze n use when needed. May it be Baked instead of pan fry. If so what temperature and baking time would you recommend?

being vegetarian I could see myself doing this recipe with jackfruit(inspired by AvantGardevegan. thank you for the recipe. you killed it with the lemon sauce really loved it.

Great recipe but I think you could make the potato crust even crisper by salting the grated potatoes before wringing out the water.
