The Chiappas cook up their Dad's favourite pasta dish, with caramelised leeks, panchetta and Gorgonzola. Michela and Emi have grown up with Italian parents in the Welsh Valleys. Surrounded by Italian grandparents, aunts and cousins, the girls were brought up in the kitchen learning traditional Italian recipes as soon they could walk

I tried this recipe tonight for dinner and it was so delicious! I had to make a few adjustments since I didn't have everything on hand. I ran out of bacon so I just added a bit of chili flakes to cook the leeks in and did everything else the same. And I totally agree with your dad, more gorgonzola cheese crumbled at the end made it more delicious! I can't wait to try your other recipes!

It's too bad you feel that way. From a different angle, people that grew up in a different region of the world from their heritage still cling onto their roots. I find that quite beautiful, really. It's a sad case when people start to discredit one's heritage because they grew up elsewhere, and I would argue those people are just as extreme as you consider these two ladies to be.

I just cooked it in my little student appartment where I only have 2 hot plates - it sizzled a lot and I might have taken a bit to much sugar, but in the end it turned out okay and I liked it, although leeks are not normally my thing (I tried this recipe, because I thought that caramelizing them might make it much better and it did)

It really gets up my nose when people of Italian and Spanish descent keep pronouncing Italian/Spanish words with the native accent, do they realise how ridiculous they sound? This seems to be committed by those living in the States mostly but these 2 take it to the extreme! I'll certainly be passing on their videos!

Fair enough. I thinking of a nice jar of Italian passata, made from good tomatoes that don't need a lot of help. I would pick that over ketchup any day. I just have to shudder like thinking of eating noodles with ketchup. _ Perhaps it's just a personal vendetta.

Made this today with good pancetta and gorgonzola dolce. It was really delish! Hold it with the sugar, mind you; one tablespoon is far to much. Half will do nicely. For the rest: a great, harty and simple dish! Very nourishing and comforting on a nippy day.

Do all Italians insist on saying italian words like they normally would when they speak english or any other language? Like when Germans say the names of their cities in german no matter what language they speak.

I love the way the girls speak with a welsh twang until they mention an ingredient when they crank the italian accent up to 11. Still I'm prepared to forgive them as quick pasta sauces are right up my street.

I've been using bacon as a pancetta substitute in all the Italian recipes. I always have a lot more grease left in the pan than you seem to have there. Do you make any adjustments when you use bacon?

And here's me, sitting here with undercooked spaghetti in tomato passata, with no cheese, herbs, olive oil, butter, pepper, vegetables or anything. University man. it does things to you.
