This super comforting four baked cheese spirali with ham recipe will become a firm favourite thanks to its beautiful ooziness and crunchy nut topping. Gennaro bakes this dish in the oven until golden and piping hot throughout. We want some! This and loads more great recipes can be found in Gennaro's Pasta Book: And for even more inspiring Itailan dishes

Gennaro, I love watching you cook. I make a pasta dish and want to learn to make it better. it's not fully Italian. It is called Cajun Chicken Penne (any pasta will do. The pasta is made with Alfredo sauce, then the Cajun seasoning is mixed and rubbed into the chicken with some oil and baked. When the chicken is finished baking I cut it up and place it on top of the pasta, cut tomato slices (at room temperature) into small cubes and distribute on top of the pasta. There may be a better sauce for this pasta dish, and there may be a better way to bake the chicken. Thank for showing us this recipe and all the others

Quite handy watching Gennaro bring the recipes in his book to life, should have known better to think a chef with Gennaro experience would come out with a pasta dish with a simple title and not be packed with flavour, no ordinary cheese and ham pasta.

Isn't the pasta going to be overcooked by putting them in the oven for 20min? Shouldn't you undercook them to take the passage in the oven into account? If yes, how undercook should they be?

gennaro do you have a book about yourself? like an autobiography, when did you start cooking? How long have you been cooking and your general experiences about your profession.
