I have permission to shoot on a 5 thousand acre farm and the farmer is happy to let me build a shelter in one of his woods, build a fire and gather food in the area. Most satisfying thing to spend a couple of days roaming around picking mushrooms berries and leaves to cook with fresh wild meat (I don't recommend picking any mushrooms without being 100% certain of what mushroom it is. This looks delicious! I only do it with rabbit, squirrel or pigeon.

Very interesting technique coming from South America, more precisely in the Pampas region, where roast lamb on the floor of fire is quite common in local communities. In Brazil the technique developed enough, you can find several steakhouses that use this technique to bake various cuts of meat sheep, beef and pork. In Argentina this technique is one of the most used to roasting it offers intense flavors and aromas amazing. Thank you for sharing!

Because of people like this, animal cruelty still exists. It's beyond my comprehension why people eat innocent animals. My heart breaks when I read The comments supporting this cruel behavior. I am a proud vegetarian, have been for 10 years. I love animals and I don't feel The need to eat Them or wear them. I am unsubscribing Jamie nor am I ever buying a book from you again. You should be ashamed!

An asado or parrillada from Argentina. It's a notional institution there, they can do whole ribs of beefs. The traditional sauce is the chimichurri. In North Africa there is the mechoui, the lamb is roasted in a similar slow way (6. 5 h for a 25 kg lamb, the carcass is left whole and filled with spices. Oil or butter is used instead of the brine.

I have absolutely nothing against people who eat meat, in fact, I enjoyed dissecting animals in school, but, I don't eat meat because I feel so disgusted by it. It seems equivalent to eating other humans. I get very queazy, and feel almost dirty whenever I think about eating it. Does anyone else feel like that?

I don't know the back story here but these guys come off as huge posers. The lamb looks amazing and perfectly cooked but Hunter Gather Cook with skinny white dudes who buy the meat from an abattoir. none of it makes sense. Could do with less posing more cooking, as it's clearly the latter they excel at!

This is a video about roasting a lamb, as it says clearly in the title. If you don't believe in it, are against it, or feel it offends you in any way, then don't watch it. People, not every single post online is a soapbox. Choose your battles wisely and you might win some of them.

Very nice. I like to consider the history behind the technique. This might have been used thousands of years ago when a small tribe of 25 - 250 people celebrated. Meat may (or may not have) been consumed weekly, monthly? depending on the circumstances.

lamb or goat shall be eaten when its whole blood came out of its body. its blood contains toxic germs which can be very harmful fr human beings, so cut the throat and let th blood drain out fr at least 15 minutes. waqi from pakistan- thanks

Reminds me of the Greek tradition we have every easter that we roast the lamb the exact same way, not butterflied though! Way different marinade seasoning etc but still this is an awesome different way to do it
