Today's recipe is goguma-mallaengi, which are steamed and dried sweet potato slices served as a snack. Calvin: I've been making this in my dehydrator the last three years. Each year, the orange sweet potatoes are usually on sale for over 80% less than the usual price as a shopping promotion during the Thanksgiving Day season. I always buy over 100 lb. when they are that inexpensive, I wash and boil them and when they are cool, I slice them like Maangchi does, and put them in my dehydrator. but I don't peel them. I eat them skin and all. They will last me for the rest of the year stored in airtight plastic containers. What I learned from experience is to make sure they are very dry, drier that what Maangchi describes, to avoid mold in storage. If they are made in smaller batches and eaten sooner, then mold is probably not a big concern. I also freeze some of the boiled whole sweet potatoes and use them in smoothies and other recipes like sweet potato rolls and Indian roti which is a type of flat bread similar to a tortilla in size and thickness.

I've never used those white or purple sweet potatoes. They look yummy in the hydrator. Do you use any salt or sugar? BTW that dog is so cute.
