I'm sorry man, but your cutting skills are not that good. First off, you don't cut a roll from one end from the other, you cut the roll in half, then your cuts from there depend on how many cuts you want. you want 8 cuts, cut the two halves in half and then the halves from those in half. if you want 10 pieces, put the two halves together, do the end cuts, then cut the remainder in half and then those halves in half and you have 10 cuts. Also, to cut reverse rolls without plastic wrap, coat your knife in water first and clean each cut. also when cutting sushi you do not want to use a sawing motion. if your knife is sharp enough it should cut in one forward pass. hope my comment didn't come off too rude. cheers.

Everyone here's full of their own BS. I just put a box cutter blade on a reciprocating saw and it slices with super-human powers. Oh yeah I operated a Tuna trawler for years and I've eaten sashimi from fish that were still alive and watching me eat them. You seriously can't tell me anything I don't already know about sushi, so don't even try.

I saw the first 10 secs of video and i immediately stop it. The cutting technique is very wrong, you must cut the sushi in one forward (away from you) stroke. He will surely kill the sushi in that way, luckily he have a very sharp knife. This video is misleading and will not help someone to learn the proper technique.

This cannot be a serious video. This is a terrible representation of how to cut sushi rolls. Shun should ask you to take this video down, it is an insult to their amazing products. For shame sir. You should google how to cut sushi rolls yourself, not make videos on it.

You can cut sushi rolls with a crappy 20 sushi knife. Just from experience, I also own a set of Masamoto sushi knives. Its all about your technique of sharpening the knife and your technique of cutting you sushi rolls. Just wondering where'd you learn your cutting from?

it's called yanagiba not yanigaba! as a professional sushi chef you should never use cling film to cut an uramaki. with the right technique and a sharp knife u get the same result as using cling film. its faster and you wont have any bits of cling film in your sushi.

my family has owned sushi restaurants for over 20 years, and been making sushi for 30, and this is probably the worst way to cut sushi, our new sushi chefs that have been working less than a year cut better than that

You are able to cut the roll, but you are not using proper technique. You couldn't keep up in a sushi restaurant cutting this way and you would end up cutting yourself.

i cannot agree with your methods of cutting, but i do agree on the shun chefs knife! i use that same one everyday at the bar and will never retire it for the home!

You should be able to cut it in one motion. Not a sawing motion. What a terrible video. Get a real knife, don't make inside out rolls (They're american)
