Ebi fry has panko not ebi itself, ebi is just Japanese for shrimp/prawn. Also the trick to making tempura is that you don't mix the batter very thoroughly so there is still a bit of pockets in the mix. Additionally you cool down the batter either in the fridge or you add ice in it right before you start frying. Also

It actually makes me pretty sad to see people being so mean in the comments. Even if he did do it wrong, which isn't even a case if this is his own recipe, there's plenty of nice ways to advise someone on something. Love your videos, regardless of if they're right or whatever. Keep it up!

Do you have your own tempura batter recipe? My old chef had us make tempura. We did two cups of flower to one cup of corn starch. Then add Soda water and whisk till proper consistency! Tastes good but what the difference between this and the bagged tempura?
