Whenever I forget to make extra rice and end up having to use fresh cooked rice for fried rice, I spread out the cooked rice on a sheet pan so it can cool off and dry out before I fry it.

The Markets now sell alot of the Farm-raised shrimp. :( It is awful and not healthy at all. !. :( They always taste moldy! . Even if you buy at the Deli, that is what they give you! .: (

Looks scrumptious! I m going to try making it using the sesame oil and chicken broth next time. I sometimes make fried rice for breakfast using just the egg and vegetables.

I add 1/2 tsp finely grated ginger with the garlic. Gives it just that little bit extra. I also cut shrimp into chunks so easier to eat. Yours looks super Yummy.
