I make these enchiladas probably once a week. I sometimes use ground turkey in place of ground beef. You can also use low-moisture mozzarella or mild cheddar cheese. These enchiladas are perfect for dinner. INGREDIENTS lb lean ground meat of choice 1/2 small onion 2 cloves garlic 1/2 tsp ground cumin 1 tsp salt pepper to taste 15 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz Colby Jack cheese ENCHILADA RED SAUCE INGREDIENTS 3 to 4 Tbsp oil 1/4 cup all-purpose flour 2 Tbsp light chili powder 1 Tbsp beef or chicken bouillon 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 2 cups water

I want to leave this comment on another video but it was an older video and I wanted you to see it right away. I think are you do an awesome job at being very detailed in your description about it exactly what you're cooking and how you're doing it and posting the timeline so people can skip to certain parts. All of that is great and very helpful. Honestly.
However, I think it'll be good if oh in every video maybe at the beginning or in the description you can mention exactly how long it's going to make that particular recipe from beginning to end. I was one of your recipes for making black beans and I really wanted to make some but I was on a very tight leash for time and I found the recipe to be really good but I couldn't do it because I didn't know how long it was really going to take lol
Anywho, love the videos please continue

My charro beans are soaking. My rice is done from the other day. I will make these tomorrow because I just finished the chili gravy an hour ago. This will be great for Sat. dinner. Thanks for the idea.

These are exactly like the Enchiladas that I grew up with too. I think these are a very southwest style enchilada, because my Mom' s family is from Arizona and this is how we all make them.
