How To Make Crispy Potato Croquettes Recipe

Here is a simple recipe for crunchy crispy potato croquettes. I like to add parmesan cheese and onions for extra flavor. The panko bread crumbs make a crunchy and golden brown texture. INGREDIENTS 1 1/2 lbs (687 g) peeled potatoes ( I used russet potatoes) 2 cloves of garlic 4 oz (117 g) chopped onion 1/2 TBSP butter 4 oz (117 g) parmesan cheese 2 large eggs 1 cup Panko bread crumbs (50 g) 1/2 cup plain bread crumbs (50 g) 1/2 cup all purpose flour 1/4 tsp pepper 1/4 tsp salt (for mashed potatoes mixture) -Place peeled potatoes in a pot and fill with cold water until potatoes completely submerged -add 1/2 tsp salt and 2 cloves of garlic to pot -Bring water to a boil first then start 20 minute cook time and boil until knife tender -drain water and return potatoes to pot to cook out any residual water for 20 seconds. -remove from heat and let them cool and continue to dry out -add butter onions and a pinch of salt to pan and saut onions until translucent and golden brown -mash the potatoes and garlic in a bowl, add cheese, saut ed onions, salt and pepper -combine bread crumbs and mix in salt to taste -form mashed potato mixture in to a patty or ball -dredge in flour, then egg and completely coat in bread crumb mixture -place assembled potato patty on a baking sheet -then place all formed croquettes in the refrigerator to set and harden -preheat fry oil to somewhere between 340 F to 350 F -fry croquettes for 1 minute on each side or until golden brown -this recipe yields 8 large croquettes or 16 smaller croquettes

i have done this similar before, with out the bread crumbs used corn flakes and soda crackers, and lady back off the dam salt, i have a craving for salty and heart conditions now because cooking with salt depends what it is and you dont have to cook potatoes in salt, or add salt if you added the cheese, and if they arent salty enough 90%people add salt on their food anyway, BACK OFF THE SALT, try other herbs and spices to give flavor if that what your look for, found a whole lot of herbs and spices that add flavor and not salt and taste way better

I don't see your thumb indentations as a defect; actually, forming this way, it's creating a small little pocket for toppings! I would make them the exact same way you did, then make a sriracha mayo and put it in a ziplock bag, cut the corner, pipe a little circle of it to fill that indent. Or, sour cream and chives, just like you said. Alternatively, could separate an egg and put a yolk into each indentation - then throw them under the broiler for just a minute to barely set the yolk!

Absolutely gorgeous. I was just trying to make up a recipe for them, when I ran into your recipe. This is too funny. I don't want to nag you, but beware that Youtube will disable your comments as soon as they realize you show your children in the video. This happened to thousands of videos since March and it's becoming increasingly frustrating for people. Until Youtube comes up with a solution, they will disable the comments if you show a child or more in your video.

Definitely making some of these. I'm not crazy about Parmesan cheese so I'm going to try mozzarella or cheddar shredded just a little bit. I hope I don't mess them up. Your little guy sure looked happy with them. I think the spicy mayo would be wonderful or the sour cream and chives would too. Or I might not take a chance on putting the shredded cheese in them. Instead I could just make a cheese sauce to dip them in. Yeah I think so yummy

My grandmother and mother made a version of this only they used leftover mashed potatoes. I've never tried it with a boiled potato but I think it would be a better fit, less moisture to deal with. Well we know from whom this adorable child gets his good looks. I'm sure Dad is in there too but why not take all the credit lol Thanks Simply Mama another great recipe. :o)

Large, marinated filet mignon and potato croquettes with a huge, spicy side salad and a nice red wine (1997 or 2007 Cabernet Sauvignon or Zinfandel) or an organic fruit juice to cut the fat with the acid! Add a decadent dessert like creme brulee or a chocolate panna cotta! Salt, fat, acid, and heat! Fruits, veggies and something sweet! A perfectly rich and balanced meal!

The cherry on top is her feeding these horrible fried concoctions to an innocent child. Make these the size of tater tots, eat only two, and it would still be a bad choice of what to eat. Never surprises when people advocate something harmful for others just to make money. Humans suck and YT brings out the worst.

I have made one's like party's before. With these you could leave a hole in the center an fill it up with cheese, bacon bits, green chives an sour cream if you like. You wouldn't be able to add much but it would be a cute idea. You would have like little potatoe bowls But these look cute, an really good.

What s your thoughts on using corn flakes for the crumb coating? We can not have wheat due to my son s medical condition. I ve tried gluten free bread crumbs and they are absolutely terrible. I ate these all the time in Germany as a kid! Thank you for sharing!

I've been hunting for your recipe. I lost it. Couldn't remember where I found it. I've made these once about a year ago. They were amazing. I made so many I froze them and reheated them later. They were excellent. Yummy. Thank you, your an amazing cook
