Today I am going to meal prep a healthy breakfast for the workweek. I made a New Year's resolution of self-care. I typically have a cup of coffee and skip breakfast. OVERNIGHT OATS 1 1/2 cups old fashion oats 1/4 tsp ground cinnamon 3 Tbsp powder seed blend 3/4 cup plain Greek yogurt 3 Tbsp sweetener of choice 2 tsp vanilla extract 2 cups water 1 large apple 1/2 cup chopped pecans I used 8 oz jars

Thank you! Self care is always a very good idea. I need to do that to as I seem to be always eating the wrong kinds of foods & drinking caffeinated beverages because of my crazy overnight work hours. I have to admit that caffeine does put my head on straight in the morning otherwise I will be groggy & have a really bad headache but I will promise myself to cut down on the amount of caffeine. I need to find the time to cook homemade meals as well. Have a great year!

I like the way you meal prepped and portioned the overnight oats I ll have to try that because I was making mine every night, the night before and it felt exhausting.
I d love some healthy lunch meal prep ideas. I feel like I spend hourrrrsss in the kitchen prepping and I always think to myself there has to be a better way! Lol

Not going to lie, but I think some grapes would be phenomenal with that Bento box. Not sure about about cold oatmeal, but it does make a great carrier for many nuts and fruits. Definitely need to work on my power seeds this year. Happy New Years!

Just finished meal prepping my lunches for work about an hour ago. then got a text from work we all need to continue to work from home I totally forgot about overnight oats! I ll be making that for the am
