Today I am going to show you another easy enchiladas recipe. The use of canned sauce makes this easy and budget-friendly. You can use the filling of your choice, but cheese and onion are my favorite. Garnish how you like and enjoy. You can make this for breakfast lunch or dinner. Ingredients (2) 7 oz cans of El Pato hot tomato sauce 10 to 12 corn tortillas (cold) 1/2 of a small onion 8 oz Queso fresco In the video I used Cotija and cheese curds 4 large eggs for topping enchiladas Pam: Cheese & onion are my favorite for the filling in enchilada. Occasionally chicken. These remind me of the New Mexico style enchiladas I grew up with. They didn't always roll them, usually they would stack and top with a fried egg. Great video. Usually I don't like videos using canned goods as to me it isn't cooking. But El Pato Sauce is just a necessary ingredient to me for Mexican cooking. I had to think back, but it was nearly 40 years ago and I was working with a cool Mexican man in a small business. He turned me on to El Pato sauce long before it was a thing that most people (especially old white guys) knew about. I use it for a lot of things. It is cheap too. (Although inflation is raising its price. I'll make some easy red rice (arroz rojo) just by sauteing some onions and using the El Pato Sauce to replace some of the water when making the rice. Easy and good.

We make these when we're feeling lazy, we usually use queso fresco de rancho and onions for the filling, or leftover shreded chicken sometimes. For a milder version I recommend using half tomato puree (like Del Fuerte) and half salsa El Pato, small Mexican kids can tolerate that version but if you are not used to spicy food use only tomato puree and just a splash of salsa el pato, plus some onion and garlic powder and salt to taste.

YES pls on some of the other breakfasty enchildas (think) tomato something I think you called it. Anyway I freakin LOVE enchiladas I just dislike the kind with chile con carne - it reminds me of the old mexican tv dinners and blech when you've had real mexican food those tv dinners are an embarrassment.

Everything looked so delicious. until that semi-raw egg was placed. I don't know how some people can eat runny eggs. Same thing as those gourmet shows that saute steaks. Nice and brown outside but still red and bloody as raw meat on the inside. Yuk.

What is the difference between the 3 El Pato tomato sauces? One says Hot Tomato Sauce, one says Tomato Sauce, and one says Jalapeno Sauce but on the cans, they all just say Tomato puree, water, chilies, onions, garlic, salt, spices. Are they all equally hot?

I used to put a can of the hot version of that sauce into spaghetti so my roommates wouldn't eat it. One of them shouted when she took some and tried to eat it, but she never did that again without asking. I'd love to see a milder version of enchilada sauce.

Love this recipe! I use El Pato on everything, it s great. I use the green can which has a bit more of a bite. You re my favorite and watch all the time. Keep up the fantastic work!
