Today I will show you recipes for 3 pies I make every holiday season. I will also show you how to make a buttery, flaky pie crust from scratch!
PIE CRUST INGREDIENTS
Recipe for two 8 to 9-inch pie dish crusts
2 cups (260 g) all-purpose flour
1 tsp (5 g) salt
14 Tbsp (200 g) cold unsalted butter (you can also use half shortening or lard)
7 Tbsp ( 105 ml) ice-cold water
extra flour for dusting work surface and rolling pin
PECAN PIE
9-inch unbaked pie shell
1 1/4 cup (240 g) dark brown sugar (packed cups)
1/4 cup (30 g) all-purpose flour
1/4 tsp salt
3 large eggs (room temperature)
1/3 cup (90 ml) evaporated milk
2 tsp vanilla extract
1/4 cup (56 g) unsalted butter (melted)
1 cup (236 ml) light corn syrup
10 oz (283 g) pecan halves
APPLE DUTCH CRUMB PIE
2 lbs (907 g) Granny Smith apples (or tart apple of your choice)
1/3 cup (60 g ) sugar
1/4 tsp salt
1 Tbsp (15 ml) fresh lemon juice
1/2 tsp ground cinnamon
3 Tbsp (30 g) all-purpose flour
1 tsp vanilla extract
9-inch unbaked pie shell
CRUMB TOPPING
1 cup (145 g) all-purpose flour
3/4 packed cup (165 g) of light brown sugar
8 Tbsp (113 g) cold salted butter
PUMPKIN PIE
15 oz can pumpkin puree
14 oz can sweetend condensed milk
2 large eggs
1 tsp vanilla extract
1 1/2 tsp pumpkin pie spice
1/4 tsp salt
9-inch deep-dish pie shell (frozen)
Rice: Your pies look delicious. All my favorites. No one in my family will eat pumpkin or even sweet potato anything, so I seldom make a pumpkin pie any longer. I do make a chocolate pie for them or brownie trifle. Happy Thanksgiving. Date: 2022-11-21
