China is only communist in government, not in its economy. Which is ironic given that marx was all about industrial production. Its economy is the best capitalist economy there is. People in the west should start acknowledging that so they can start taking notes. Having some government owned companies in the economy is not anti capitalistic but rather anti monopolistic and improves competition.
Actually I just realized that the chinese party govt is organized like a giant corporation. Basically merit based advancement and alignment with company policy (which is leninist principles but you could summarize that as 'what's in the people's interest'. No wonder they figured out how to run an economy. Also pretty much anyone can join if you got 2 govt people to vouch for you, which is basically like succeeding at an interview.
So the difference to a democracy is we are the shareholders electing the board/ceo, while they are a private company, avoiding all the splits in the electorate. But not having an owner is also they key problem, there's no proper way to select the leader, which is why it's a dictatorship. Or rather the chinese think the system (committee) is a robust way of getting a competent leader, but it's an illusion. They are just 'lucky'.

Mark, thank you for visiting my hometown! I just wish you had spread the food tour into several days. It must be unpleasant for you to consume so many somewhat repetitive dishes in one day. And there are much better food destinations beyond the old city center, offering distinctive flavors of spicy food. Most importantly, please don’t eat food directly out of the hot pot, it will cause long term damage to your tongue and throat. The major purpose of the dipping sauce is to cool it down. If you don’t like the sesame and garlic taste, just put the food down in a bowl for more than 30 seconds.

Hi, Mark! Thanks for this amazing video! I just want to ask. Do you want to come to Changsha for a day or two to test out the spicy food here if you are still in China I literally stopped eating my dinner to write this comment because I am so excited to know that you are IN CHINA! Big Fan!

Even after 4 special treatments, I still would not eat ANY fresh water carp. Carp is bad enough without living its life swimming in industrial waste and who knows what else! Carp makes great fertilizer to grow food that actually tastes good without 4 million bones in it.

I would not eat that noodle. they serve it wrong. In chinese culture, we cannot serve the living people with chopstick shove in the meal. It is only for the dead. Taboo.

AWESOME! This is truely Asian/ Chinese style: squatting at the roadside and enjoying the food. As long as the food is great, we don't care about the ambience.

Big question though, does the numbing go beyond after you swallow Like does your stomach feel numb or. how does ones intestines handle all that spice and numbing

I think the Food Guide after spending a day of eating extreme spicy foods with Mark, is reconsidering a possible career change to just being a Tour Guide instead

My favourite part of this dish is the bean sprouts soaked in chilli oil n slurping the slippery transparent sweet potato noodles at the end

Looks delicious, but knowing China and its gutter oil issue, I will pass on the idea of eating any hotpot in China or any fried food.
