NAKHON SI THAMMARAT, THAILAND ( ) - Welcome to southern Thailand, and one of my favorite provinces in all of Thailand - Nakhon Si Thammarat. The food is some of the best and spiciest that you ll find in Thailand. Because of it s tropical climate, Southern Thailand is home to many unique and interesting fruits and vegetables. Today, we re eating nipa palm fruit ( jaak in Thai, which looks a lot like an alien spiky ball - or a wrecking ball! In the Pak Phanang district of Nakhon Si Thammarat, in a wetlands area with mangroves we headed to the community center where they grow and produce products from the nipa palm tree. Along with the fruit, you can tap the sap, to make vinegar, alcohol, or nipa palm sugar. Basically every part of the nipa palm tree is useful somehow. But the fruit is perhaps one of the craziest looking fruits you ll ever see. In order to make the curry, you actually use the young nipa palm fruit, and not the jelly seeds, but rather the woody stem of each piece of fruit, sliced thin. It almost reminded me of young jackfruit or bamboo shoots, with an amazing meaty texture and fibrous. The curry was outstanding, so much pepper and spice, and with a delicious local chicken. We also made khanom jaak (, which is a very popular Thai sweet snack made with the nipa palm sugar syrup. They used rice flour, egg, and only nipa palm sugar, wrapped in nipa palm leaves and grilled over fire. You ll find khanom jaak all over Thailand, but this was by far the best version I ve ever had, mildly sweet, with such an intense fragrance from the syrup and nipa palm leaves

You will not see a lady dressed up in traditional attire cooking the curry in a regular day. wow what an awesome community want to have that snack wrapped in nipa leaves I like the music background always gives me the beachy feels along with the sea breeze and coconuts swaying. even Micah's voice I can't wait for the father and son duo exploring more food in the future.

The palm is nipah in malay. Since nakorn sitammarat used to be a malay state hundred of years ago that is why they used the same name. In traditional malay food, malay people produce a type of vinegar used in their cooking known as cuka nipah. The leaves being used as roof in traditional houses in states such as Kedah until late 70's or early 80's

It is Alien! never seen before. I was screaming NOOOOOOO when he cracked the coconut with machete and wasted all the coconut water. He just wasted natural healthy water instead of collecting it in a pot. What a waste! they have no value for it.

In Indonesia we don't really eat that Nipah but sometimes people eat the young one taste like coconut. But we never Cook it. This is amazing mr wiens. Hope meet you someday when revisit Indonesia.

All around the world Palm trees are producing different edible fruits and they are just amazing how many different kinds there are. totally weird looking ball

Here in the Philippines, the cooked coconut inside the leaves, are called tupig its so delicious, you can find it near pangasinan and tarlac

Go sir could not go to over there this year. Miss it so much! Last i saw those fruits in the mangrove field at the mekong delta.
