A great regional and family recipe. Once again, you do not need a high-tech kitchen to create fantastic food. You just need someone with the knowledge and the passion. Reminds me so much of my grands mothers. I will try this curry today (I confess I will use the grinder and will put less chillies) and when I eat it I will feel like sitting in the countryside in Thailand on a bambu fence with the sun adding a bit of heat to the chillies. What a great way to clear out all the pork ribs we have accumulating in our freezer And just when the wife and I were raving over the curry we just had for dinner, ha Such a timely find, but more importantly, what a blessing to have you share a part of home Thai cuisine with us. Hi Mark Can I buy red curry paste for this dish instead of making it like you did? I live in the Midwest in the U. S and the Asian markets dont have some of the ingredients you've listed. My husband is from Thailand and misses the authentic Thai food. The Thai restaurants here are not authentic, it's Americanized. Thank you

Amazing recipe mate, thank you for sharing a family favourite with us. These flavours are so reminiscent for my childhood growing up in Malaysia, where as you know the influences of Thai, Chinese and Indian cooking are so prevalent in Peranakan cuisine. Keep the recipes coming

if we buy red thai curry paste will it become similar? it looks too difficult to do all that but wondering if thai red curry paste is similar and if it does not have some of the ingrediants can we add it like the shrimp past?

Every time I watch your video it makes me hungry. The dish is similar to Ao (Naga) dish except that instead of lemongrass, Cummins seeds and black pepper we Add tomatoes and fermented bamboo shoots.

I live in an apartment (on the 2nd floor) and I can't see myself pounding the paste for an hour without getting a noise complaint lol. Is there a quicker way to make the paste?
