Trigg Brown of Win Son, a Taiwanese-American restaurant in Brooklyn, NY, makes a big chicken bun in the Munchies Test Kitchen. Trigg starts with breaking down a whole chicken before marinating it in a mixture of ginger, garlic, scallions, Chinese five spice powder, and shio koji. Big pieces of chicken breast and thighs are then dredged in sweet potato starch, corn starch and rice flour, fried, and dusted with more Chinese five spice powder and cayenne pepper. The result is a very crispy and slightly spicy piece of fried chicken that-s placed on top of a sweet bolo bao, topped with an herb salad, and drizzled with fermented tofu mayo. Kind of surprised there's nothing pickled on that sandwich. Looks great, and I'm sure its delicious, but I was really expecting some sort of non-cucumber pickle topping. Never felt this blue-balled by a recipe before. Now I've gotta go research alternative pickling options to put on sandwiches.

I hate seeing someone eat a chicken sandwich or a burger upside-down. OCD? Maybe but I'll not the only one lol give up the alcohol bro I used to drink first thing in the morning and I was an alcoholic. just saying.

Yep. Gonna try this. Think ill make two batches, because im curious how adding a little fresh pineapple to the marinade blend would have the chicken turn out. Or maybe a little lemon or lime juice in the herb mix.

Travelled from UK to New York with my wife last September with the main objective being Win Son - it was amazing but my wife got so pissed she can barely remember the meal - I-d defo go back

I've had chicken sashimi in Japan, it was some local breed that didn't carry salmonella or something like that. Tasted like raw chicken though, 2/5

Heard about this place and was determined to try it next time I was in Brooklyn. I did. but sadly every dish we tried was so salty! Sando looks good though

tell me or not Munchies. this IS the restaurant at Williamsburg--? There use to be a hispanic -food restaurant before Win-son was established. -
